1 medium onion, chopped 1 green pepper, in chunks (don't discard the seeds) 2 medium tomatos, diced 3 medium white potatos, in chunks 3 tbsp rice, washed and drained 50 ml extra virgin olive oil 1 tbsp butter 2 cups warm water 1 tsp salt Pepper for taste Sautee the onions with the butter and olive oil in a large pot on medium heat. Add the green peppers with the seeds along with the tomatoes, potatoes, salt and pepper. Cook for about 5 minutes, stirring constantly. Add the water and rice. Cover the lid halfway and cook for about 20-25 minutes on medium heat.

Hi Jo just to ask, with this dish which rice do you use, as mine ended up not looking like yours at all and I think it is down to the rice we have here which is short grain and not that good, more used to the long grain myself, also do you mean just small cup of water and not mug size just ot get it right next time I try, and have you any more recipes like this worth trying Cheers Ann

Hi Ann.
The rice that will proberley work best with this dish is Basmati rice. You can buy here, i have seen 1kg bags for about 4ytl.
The 2 cups of warm water will be approx 300ml.
More recipes on the way.
