The best ice cream cake recipes

Ice cream with ekmek kadayýfý (a syrupy spongy desert served with cream), ayva tatlýsý (oven-baked quince in thick syrup) or güllaç (a desert made of thin layers of dough made with milk)... Ice cream, beyond being a refreshing taste adored during the hot summer months, is now accompanied by cakes and desserts.While Turkey is well acquainted with eating ice cream in cones, ice cream on a stick only showed up 15 years ago. Later on, ice cream that resembled homemade ice cream sold in packages became a passion. Yet, it would be injustice to call this "ice cream." They were actually the traditional Turkish desserts -- ekmek kadayýfý, ayva tatlýsý and even güllaç -- served with ice cream. Ice cream became more than a refreshing taste for consumers thanks to ice cream producers who made it a habit to introduce products forcing the boundaries of the imagination every summer. Moreover, ice cream is currently eyeing the throne of traditional desserts. Algida Carte D'Or has recently published a book on desserts with ice cream, bringing together a series of recipes prepared with Turkish desserts and ice cream. This book serves as proof that ice cream has found its place among meals and tea times. We would like to share with you some of these recipes.,
Cake with pastry, apricots and ice cream
Ingredients: 4 sheets of thin pastry dough (milföy), 10-12 apricots, half cup sugar, 1 egg yolk, pistachio and chocolate ice cream (one scoop of each)
Preparation: Remove the pits from the apricots. Put the apricots and sugar in a saucepan and cook them until they caramelize. Cut the four sheets of pastry dough into circles with the help of a big glass. Take half of the pieces and cut out a hole in the center with the aid of a smaller glass. Put these pieces on the larger circular pieces and fill the hole with apricots. Cool the pastries in the fridge for 25 to 30 minutes. Whisk the egg yolk and brush the pastry with it. Bake in an oven for 20 or 25 minutes. Decorate them with powdered sugar and serve either hot or cool with pistachio and chocolate ice cream.
Ice cream with irmik tatlýsý (semolina dessert)
Ingredients: 3.5 cups semolina, 20 grams pine nuts or pistachios, 250 grams margarine or butter, 3 cups sugar, 3.5 cups milk or water, vanilla ice cream
Preparation: Put the semolina, margarine/butter and pine nuts or pistachios in a saucepan and cook them until they turn red. Cook water/milk and sugar in another saucepan until it turns into syrup. Pour the syrup on the semolina mixture and cook for two to three minutes at high heat, then for five minutes at normal heat and finally for six or seven minutes at low heat. Cover the saucepan with a towel and place the saucepan’s cover on top and wait for a while. Serve with vanilla ice cream when it cools.
Smoothie with sour cherries
Ingredients: 250ml sour cherry juice, 1 banana, 200 grams cherries without pits (frozen or fresh), 1 tablesthingy honey, 4 ice cubes, 4 scoops sour cherry ice cream
Preparation: Put juice, chopped banana, sour cherries, honey and ice cream in a blender. Blend for two to three minutes or until ice is crushed. Pour the mixture into glasses.
Summer boat
Ingredients: 1 small sweet melon, 2 kiwis, a handful raspberries and grapes, 1 nectarine, 1 cup sugar, 1 cup orange juice, 45 grams pistachios, 2 tablesthingys strawberry ice cream. Fruit can change according to the season.
Preparation: Cut the melon in half and remove the seeds. Cut the nectarine and the kiwis into little cubes. Mix the fruits with raspberries and grapes. Add the sugar and orange juice and mix. Use a food processsor to grind the pistachios. Fill the melon with the fruit salad, put ice cream on top and sprinkle with ground pistachios.
Muffins with ice cream
Ingredients: 125 grams butter, 2 cups sugar, 2 eggs, 2 cups flour, 1 teasthingy baking powder, 2 tablesthingys cacao, 3 tablesthingys milk, 4 scoops vanilla ice cream
Preparation: Put butter, sugar, eggs, flour, cacao and baking powder into a food processor. Add milk while blending until a soft dough forms. Pour this dough into small baking cups and bake for 20-25 minutes in an oven preheated to 160 degrees. Let them cool. Serve with ice cream and sour cherry sauce.
Ýncir diyarý (Fig land)
Ingredients: 6 fresh figs, 80 grams of white chocolate, 110 grams of walnuts, vanilla and chocolate chip ice cream
Preparation: Peel the figs and place them on a plate. Fill a pan with water. Place a smaller pan into this pan and place the white chocolate in it. The chocolate will liquefy while the water boils. Decorate the figs with the liquefied chocolate and put walnuts on top. Serve with ice cream. You may add some chocolate sauce if you wish.
Cup with cake pieces
Ingredients: seasonal fruit, 1 slice cake, strawberry sauce (or jam), sour cherry ice cream
Preparation: Slice the cakes into little cubes. Add pieces of fruit and ice cream scoops. Serve with whipped cream or strawberry sauce.
