Kurban bayrami - the Feast of the Sacrifice - the Greater Bairam
Not to be argumentative but as this is a forum read by quite a few people it should be pointed out that this is an islamic holiday that is set by the Supreme Judicial Council in Saudi Arabia.
People in muslim countries do like to start celebrating on the sunset of the day before a Bayram but it is not official. The reason holidays start unofficially is the same reason that on December 24th in UK most people finish work at lunch time.
The Hajj (Annual Pilgrimage to Mecca) is December 6 - December 9, 2008
Eid-ul-Adha or Eid al-Adha (Festival of the Sacrifice) Holiday occurring on the third day of the Hajj, lasting four days. It commemorates the Prophet Abraham's willingness to sacrifice his son, who was replaced by a lamb.
This is always on the same day using the islamic calendar (lunar calendar), but as we use the Gregorian calendar (solar calendar) it varies from year to year.
The Lunar calendar is approximately eleven days shorter than the Solar calendar. Each year, Eid al-Adha (like other Islamic holidays) falls on one of two different Gregorian dates in different parts of the world, due to the fact that the boundary of crescent visibility is different from the International date line.
The official date of Eid ul-Adha (Kurban Bayramı in Turkey) as announced by the Supreme Judicial Council is December 8, 2008 and the three days after the listed date are also part of the festival.
The date 10th of Dhu al-Hijjah 1429 AH is the Islamic date that does not alter (to understand this year you need to understand Islamic prophet Muhammad's emigration from Mecca to Medina), 10th day of the last month of the Islamic calendar.
On the festival's first day, all family members wake up early to make their final preparations. Male members go to the mosque to perform the special Bayram Namazi (sacrifice festival prayer). The actual sacrifice begins after the men return from the mosque. The head of the family is expected to perform the sacrifice, but a butcher can also be used to perform the ritual on their behalf. The animal is given water and salt, its eyes are wrapped with a clean rag, and it is turned to face Mecca. Verses are recited from the Koran, and then the animal's throat is cut.
The meat is then divided into three portions--one is given to the poor, one to neighbors and relatives, and the third is kept for the household. The skin of the animal is donated, and the income obtained from the skins are shared with various social welfare organizations.
People visit each other during the festival and children will kiss the hand of elders and put it to his/her forehead - Cologne, chocolate, "baklava" are offered to visitors and it is traditional to give children money. Useful phrases to use at this time
iyi bayramlar! – Good holiday!
Bayramınız kutlu olsun! – Have a happy Bayram!/Have a happy holiday!

It is illegal for anyone other than a qualified butcher to carry out the sacrifice and should be carried out at a designated site, and under Halal procedure. The designated sites are mostly ignored, but it is still illegal. Anyone who wants to see the sacrifices under controlled conditions can go to Fethiye Market from early on Monday 8th. Dec., you will need a strong disposition, or just walk around Koycegiz.

Ouch, I will give it a miss.
I prefer to be ignorant of the fact my dinner used to be alive, or not think of it if I can help it.
Ignorance is bliss so they say, LOL

On the first day of the sacrifices in Turkey , over 2500 butchers were injured, some seriously, while trying to carry out their responsibilities.

Were these proper skilled butchers?
I may be going off topic here, but I have never rated Turkish Butchers when compared to my local Yorkshire variety.
